Kolkata/calcutta style chicken chow mein recipe

I have tried making chicken chow mein, but have never been able to get anywhere near the Kolkata style chicken chow mein. The unique taste of Calcutta/kolkata style chicken chow mein is what i want my family to taste. Any help?
